Japanese food in Puerto Rico is unbelievably bad. The island doesn’t produce any sushi-grade fish locally because most commercial fishing here is focused on reef species and not the tuna–salmon–hamachi supply chain. That means every sushi restaurant is working with long-haul imported fish that’s been frozen, thawed, and shipped through multiple distributors before it touches your plate. The fish has zero melt and you’re basically chewing fibers. I’m from Vancouver, the birthplace of Cali roll, and I ordered a California roll hoping to reset my brain. They gave me a solid chunk of crab stick and a full block of cream cheese instead of cucumber (hi Philly). If I were a chef and ever served up a plate of sushi like that, I would rather commit seppuku than bearing centuries of shame upon my ancestors. Please kindly never get Japanese food here. If you want Asian food in Puerto Rico, go eat the Chinese fusion spots
