Went vegetarian tonight😋 ✅ 1) Protein • tofu + lentils = legit plant-protein base • and because it’s “a lot,” you’re probably getting ~30–60g protein depending on portion size ✅ 2) Fiber + gut health • lentils + greens + beans/veg = insane fiber • very good for insulin sensitivity, digestion, fullness. Dressing is just cucumber yogurt ✅ 3) Micronutrients • leafy greens + legumes = dense in iron, folate, magnesium, potassium, antioxidants
