They offer two options: tsukemen (dipping ramen, thicker noodles, rich rich rich broth) and tontori (thin noodles, lighter broth). You can customize it a bit and add spice to the broth. I got the tsukemen and liked it, but the broth cools quite quickly, so you need to eat fast. We got there right before opening time on the weekend and barely got seats. Would suggest doing the same unless you're ok with waiting.
