Every edible part of the pig imaginable available in taco format. The Surtida (mixed cuts) is probably the one that I’d make my go-to, though it was fun to try parts like the uterus (saltier, chewier texture), tail (uber fatty - was not my fave), and snout (medium fatty and tender). Would love to try ear and jowl next time! Also loved the pickled onions and salsa options as they cut through the fatty pieces pretty well. Not much seating available unless you get there early or get lucky.
